Preparing a new marron course for tonightโs private dinner for my friends. They come often, so it puts a little pressure for me to make something new. This one was quite an epic dish. Poached and bbqโd marron with red curry using some native spices with the blend. Added some coconut cream to the curry when cooking and strained, reduced, seasoned with lime, salt, sugar. Then emulsified together with a pinch of xanthan. Served with some beach herbs (sea blight, samphire, karkalla) desert lime, yuzu and shell oil. You donโt see the claws here being used in this dish but I added that onto a previous course which is the chawanmushi. โ๏ธโช๏ธ๐ A snow white apple Itโs made with sugar and coated with chocolate. Itโs then filled in with elderflower gin compressed apples, apple caramel, freeze dried apples, lemon balm, daisy petals, yuzu, vanilla rose creme, green apple sorbet and dulce sand. Not an easy dessert to make - I would love to put this on the menu as itโs such a stunning dessert that is pleasing to the eyes and palate. I donโt see much or any intricate sugar blown dessert here in Australian restaurants (obviously because itโs labor intensive). I hope to change that soon, lโIl probably do these on special occasions.
Although I may not have won, my head is still held high. My two best desserts that Iโve ever done for Experiential may not have the been the best for tonight. Still Iโm grateful and thankful for the love from all the fans, friends, family and my beloved team @koiexperiential @koidb @monkeyscorner Itโs been a pleasure to be given the chance to be a part of this Journey once more. When one door closes another will open, so this is just the beginning, itโs never the end. I hope youโll all continue to watch me grow and progress in this passion of a career that I have chosen. Dessert Masters have been a platform for me to showcase and voice my art, my craft and my purpose. It has been quite challenging to even gain the attention of the food media in Australia. Going 8 years of never being reviewed or winning an award, is the reason why Iโve chosen to come back on and put myself out there for the world to see as well as challenge myself amongst peers. I am incredibly thankful for the opportunity and hold great pride being a self-taught chef, so once again thank you all. 2024 will be a huge step up into my career as I move on to find bigger opportunities abroad with Melbourne on the way.
